Brownie-Fruit Pizza

Rich chocolate with flavorful fruit. Just plain yummy!

3/4 C. Sugar
3 Tbsp. Butter, softened
2 Tbsp. Cocoa Powder
1 Tbsp. Oil
1 Egg
2/3 C. Flour 
1/4 C. Vanilla Greek Yogurt
1 (11 oz.) Can Mandarin Oranges
1 Peach (fresh or canned)
1 C. Blueberries (fresh or canned)
1 C. Blackberries (fresh or canned)
1/4 C. Walnuts or Pecans, crushed
1/4 C. Chocolate chips

Preheat oven to 350°. Grease a 12" Pizza pan or 9x13" casserole dish, set aside. In a small bowl mix sugar and butter until smooth. Add cocoa powder, oil, and egg; mix until smooth. Add flour 1/3 C. at a time, mix well. Spoon into pizza pan or casserole dish. Grease fingers and press batter into corners and around edges until even. Bake for 20 minutes on top rack. 

Prepare fruit while brownie is baking. Cut peach into bite size pieces. If using frozen berries, microwave for 30 seconds to 1 minute. When brownie comes out of the oven. Spoon yogurt over the brownie evenly. Place fruit randomly over the top. Sprinkle walnuts over fruit. Place chocolate chips in a ziplock bag and place in microwave for 15 seconds remove and smoosh chocolate chips, repeat until smooth. Clip a small amount of plastic off of one corner of the ziplock bag and drizzle over the top of the fruit pizza. Serve warm.

Serves 8-12.
