Tomato Tilapia Soup


Ingredients:
1/2 Cup Butter
1 Lg Onion diced
3 Lg Tomatoes diced
1 Green pepper diced
1 Cup mushroom cubed
1/2 Cup Sour Cream
1/2 Cup Milk (2% or Whole)
2 Cups Water
4 Sm Tilapia cubed
1/4 tsp garlic powder
a pinch of dill

In a large pot, sauté onions in butter until golden. Add tomatoes, simmer until most of water is almost. Mash tomatoes & onions with a potato masher. Add remaining ingredients and let boil for 10 minutes to cook Tilapia thoroughly. Let simmer on low for 2-3 hrs to stew.


Serve warm with buttered french bread for an appetizer. Or add 2-3 cups cooked quinoa to the soup and serve as main course.
