Zucchini Scramble

Non-traditional savory breakfast.

Ingredients:
2 Yellow zucchini squash
2 Mushrooms
2 Carrots
1/2 Onion (optional)
2 eggs
1/2 T butter
1/4 C water
1/2 T finely chopped fresh oregano
salt & pepper to taste (dash of each or more)


In a pan, sauté onions and zucchini in butter until golden. Add carrots & water, simmer until most of water is almost gone and carrots are soft. Add remaining ingredients and mix. Let sit for 1 minute. Flip/stir and let sit for 1 minute to ensure egg is cooked thoroughly.
Serve warm with apple or orange slices for well rounded meal.
